The video begins with a quiet drone shot over the frozen Kuttari Lake, setting the mood for our last night at camp. In Japan, tai (sea bream) is considered a lucky and celebratory fish. It is often served on special occasions because the word “tai” sounds like “omedetai,” which means joyful or auspicious. With that meaning in mind, Hiro prepares tai shabu to celebrate Klein’s birthday. We start by making a rich dashi broth. The tai is prepared in matsukawa style, where hot water is poured over the skin to enhance its texture and flavor. Some pieces are lightly grilled on the wood stove and finished with a quick torch on the skin, served with a touch of lemon zest as a small appetizer. Then we enjoy tai shabu the traditional way — briefly dipping thin slices into the hot broth, tasting it first with the seasoned dashi, and then with ponzu and fresh herbs. The remaining grilled tai is mixed into rice cooked in a mess tin, creating a simple but comforting tai rice. After dinner, we slowly wind down with a craft beer from Akan, and a birthday gift — chocolates from Pierre Marcolini. The next morning, we try the frozen bubble experiment. The temperature wasn’t as low as the previous day, but we still get to see bubbles freeze and collapse like delicate cellophane. Finally, we pack up and leave the campground. As a small epilogue, we drive through Sapporo after a rare record-breaking snowfall, moving through streets that look almost like a snow maze. From extreme cold to a celebratory meal, and back to everyday life — this is how our birthday winter camping trip comes to an end.
