Recipe for Banana Bread Reloaded: -Three ripe or overripe bananas chopped as in video -a few shakes of cinnamon and a bit of nutmeg -one teaspoon of vanilla extract -125 grams of butter softened to room temperature -75 grams each of brown and white sugar -one egg -100 grams of Crème fraîche or sour cream (Großes Dankeschön an @CALLEkocht für die Verfeinerung!) -230 grams of all-purpose flour (Typ 405 in Deutschland) -one heaping teaspoon of baking powder (Backpulver), about 1/4 teaspoon of baking soda (Natron) and about 1/4 teaspoon of salt -80 grams of chopped walnuts Make the batter: Combine dry ingredients (flour, salt, baking powder and baking soda) in a bowl first. Set aside. Then butter your banana bread pan generously. Mash your chopped bananas in a bowl with a masher or any other tool that will do the trick. At this stage, I add my cinnamon, nutmeg and vanilla extract ( you can also scrape out a vanilla bean) to the banana mash. In a mixer, hand or stand like mine, whip butter that is a room temperature. Then add the sugar and the egg. Next blend in the banana mash. The final step is to alternatively add the flour mixture and the crème fraîche or sour cream until all is well-combined. I also fold in some walnuts that are coarsely chopped. Bake in pre-heated oven at 180 degrees Celsuis/356 degrees Fahrenheit for at 50-60 minutes. After 50 minutes take out cake and with a butter knife test its doneness. If the knife comes out clean, your cake/bread is ready. If not, into the oven for another 10 minutes. Make sure you let cool in the pan for another ten minutes. Banana bread tastes best the next day when it is fully cooled and has solidified a bit.
