Gather spices, wash and break down celery, onion and carrots slightly if whole (use ends, skin of the onion, ends of celery, whatever you have on hand) 2. Add the bones and veggies along with the spices to an XL soup pot that can hold at least 4 gallons of liquid. 3. Cover everything with water and turn on high heat. Allow the broth to come to a boil (about 10 minutes). Once it does, turn down to medium heat, and simmer uncovered for 60 to 90 minutes to allow flavors to develop. The broth should reduce by about 1/3 to 1/2. 4. Store in the refrigerator for up to 5 days, or freeze in 2 cup portions for easy meal prep in the months to come.
