Ingredients: 500g all-purpose flour 300g water 5g sea salt 10g olive oil 50-100g sourdough starter (use more if your starter is weaker) Instructions: Mix the Dough: In a large bowl, combine all ingredients. Mix until no dry flour remains. Cover and let rest for1 hour Stretch & Fold: After 1 hour, grab one side of the dough, stretch it up, and fold it over. Rotate the bowl and repeat on all four sides. Cover. Repeat this process after 45 minutes and again after another 45 minutes. Bulk Fermentation: Let the dough rest at room temperature for 3-4 hours, until it looks puffy but not over-risen. Shape & Final Proof: Take the dough out and shape it into a round or oval loaf. Cold Ferment: Transfer the covered dough to the fridge for 12-24 hours for deeper flavor. Preheat the oven to 450°F (232°C). Bake with Steam: Place a pan of hot water on the bottom rack for steam. Bake in a baking pan or pizza stone for 20 minutes.
