Pineapple cobbler with fresh pineapple and pie crust is delicious. With an old fashioned southern look and taste, this cobbler is perfect if you like peach cobbler but want something different. Although most pineapple dessert recipes call for canned fruit, using fresh or frozen pineapple in this cobbler makes it incredibly flavorful. If you're looking for something different that still has a classic feel, watch this video to learn how to make pineapple cobbler. The first step in the recipe is preparing the filling. Place 3 cups of fresh pineapple or frozen pineapple into a large pot on the stove, along with water, sugar, lemon juice, lemon zest, and a pinch of salt. After cooking for 10 minutes to soften the pineapple, add a cornstarch slurry to thicken the filling. Unlike pies, cobblers are very flexible in terms of crust: some have both a bottom and a top, some just have a top crust, etc. With this cobbler I decided to add a bottom crust, so I parbaked it so that it wouldn't get soggy after adding the filling. Before adding the pineapple filling, I added some pieces of pie crust to form dumplings. I like the texture contrast between soft dumplings and crispy crust, so I highly recommend adding a few too a southern style cobbler: just don't go overboard. I then poured in the filling, spread it out evenly, and then laid a lattice top on the top. After sprinkling with 2 more tablespoons of sugar, I baked the cobbler in the oven. Honestly, my pineapple cobbler with fresh pineapple recipe was an absolutely success. Just like my pineapple pie, I was surprised by just how strong the pineapple flavor was: I think that cooking the fruit, along with the bit of lemon, really brought out the flavor. In terms of flavor, this pineapple cobbler definitely reminded me of peach cobbler both in look and, surprisingly enough, in terms of taste, too. I also really liked how it looked. The pie crust was perfectly golden brown, and the lattice top made the cobbler look skillfully homemade. The filling was thick yet still juicy, just how a cobbler should be. I loved the bright yellow color of the filling, too. As I said, this pineapple cobbler recipe was amazing.
