Lihing or in Chinese “Traveling plum”powder is very popular in Hawaii. You can find it almost anywhere! It’s a salty dried Chinese plum that is grinded down into a fine powder. We use it on fruit, sauces, and even drinks. Lihing Mui referring to the plum is also found almost everywhere and in many different varieties. Dating back to plantation days here on the islands we were influenced by many different cultures with cooking , clothing and even the way we speak. Making this Roof lemon is childhood memory of seeing my grandma turning the glass jars of lemons on the roof, and waiting till it was just at the peak of readiness. I could never forget the taste of a lemon being salty and sweet at the same time. Adding lihing powder and eating it just like that, to adding it to tea for a sore throat or even a dried fruit salad. It’s endless. I hope you folks enjoy not only the taste but appreciate the process. Recipe: Large glass jar or mason jar Hawaiian salt/ rock salt Lihing Mui Powder Lemons
