Allow to cook (simmer) for 30 minutes until tomatoes are completely broken down. Add sea salt to taste and additional olive oil, if desired. Boil pasta according to package instructions. Remove from water and drain. Toss pasta with olive oil to prevent sticking. Serve with tomato sauce and Parmesan cheese. May add fresh basil if desired. Pasta a la Nena Serves 4 ½ pound capellini pasta 1 can Le Sueur Peas or 1 cup frozen peas ½ cup diced ham or cooked bacon ½ cup olive oil Salt Black pepper Shredded Parmesan cheese Boil pasta according to package instructions. Drain and toss with olive oil. Then add ham and peas. Add additional olive oil if desired. Season with salt and pepper, Serve with Parmesan cheese. May add fresh basil or parsley for garnish.
