I have been making homemade granola bars for years now, and I won't be stopping anytime soon! They are easy to make, and you can make any combination of flavors that you desire. If you have children, you can feel good about knowing that you are in the driver's seat of exactly what goes into these babies (aka no preservatives, no refined sugar, ahem, ahem). Feel free to use this recipe as a base and let your creativity fly! Replace chocolate chips with any dried fruit, replace nuts and seeds with whatever ones you prefer. There is so much wiggle room! Here is what you need to make them: 2 cups gluten free rolled oats (I like Bob's Red Mills) 2 cups crispy rice cereal 1 cup vegan chocolate chips (or any combination of these or dried fruit) 1/3 cup sesame seeds 1/2 cup chopped pecans 1/2 cup copped almonds 1 cup raw honey 1 cup almond butter 1 tsp vanilla 1. Combine the dry ingredients. Set aside. 2. Heat the honey, almond butter and vanilla, just until combined (you don't want to heat the honey too much). 3. Pour the honey/butter mixture over the dry ingredients. Toss to combine. 4. Place a layer of parchment paper in a 9x13 baking dish and press the granola into the dish. Pack down in an even layer and place in the fridge or freezer to set. Cut them into desired bar sizes, and store in the fridge or freezer for a month or longer! Enjoy!
