Crispy Aloo Kachori with a flavorful potato filling and perfectly golden crust. The crunchy outside and spicy potato filling make every bite irresistible. Ingredients For the Aloo Filling 1 tablespoon oil 1 cup chopped onion 3–4 tablespoons ginger paste 1 tablespoon red chili powder 1 tablespoon cumin powder 1 tablespoon turmeric powder 1 tablespoon tikka masala 1 tablespoon salt 1 tablespoon chaat masala 1 tablespoon green chili paste Boiled and mashed potatoes 1 tablespoon lemon juice Fresh coriander (chopped) For the Kachori Dough 2 cups all-purpose flour 1 tablespoon cumin seeds 1 tablespoon salt 2 tablespoons oil Water (for kneading) Instructions Heat 1 tablespoon oil in a pan. Add chopped onions and ginger paste. Sauté for a few minutes until fragrant. Add red chili powder, cumin powder, turmeric powder, tikka masala, salt, chaat masala, and green chili paste. Mix well. Add boiled and mashed potatoes to the masala and mix until fully combined. Add lemon juice and fresh coriander, then mix again. Set the filling aside. Prepare the Dough In a bowl, add all-purpose flour, cumin seeds, salt, and oil. Gradually add water and knead into a soft dough. Divide the dough into about 8 small balls. Shape the Kachori Roll each dough ball into a small circle. Place some prepared aloo filling in the center. Cut the edges of the dough into thin strips around the circle. Fold the strips over the filling to form a kachori shape. Heat oil in a pan. Fry the prepared kachoris on medium heat until golden brown and crispy.
