Salmon: 1 tsp Paprika 1/2 tsp Cajun fish seasoning 1/4 tsp ground red chili powder 1/2 tsp garlic salt - can substitute with 1/2 tsp garlic powder and a pinch of salt 4 thawed Salmon portions 1 tbsp olive oil Rice 1 1/2 cup precooked rice juice of 1 lemon 1/2 tsp salt 1/4 cup chopped cilantro For the rice: Cook rice until done, then drain. In a heavy skillet, heat the oil. Add the rice and cook for a few minutes. Then add the salt and lemon juice and stir until combined. Let cook for about 2 minutes. Add the cilantro, stir until combined, cook for no more that 1 minute and remove from heat. Set aside while you cook the salmon portions. For the salmon portions: Mix the spices together and set aside. Pat the salmon portions dry. In a heavy skillet, heat half the olive oil until almost smoking. Place 2 of the salmon portions in the skillet skin side down. Season the flesh side with the seasoning mixture. After 2-3 minutes, flip the salmon portions and cook for another 2-3 minutes. Add remainder of the olive oil and repeat with remaining salmon portions.
