Smoked Sausage and Cabbage 1 lb. smoked sausage, cut into pieces 1 tbsp olive oil 6 cups cabbage, coarsely cut 1 onion, cut into 1/2-inch wedges 2 cloves of garlic, minced 3/4 tsp sugar - I substituted with one yellow sweet pepper, chopped. 1/4 tsp caraway seeds 1/4 tsp salt 1/4 tsp ground black pepper 1/4 cup of water Heat large nonstick pot over medium-high heat. Add sausage, cook and stir regularly until sausage starts to brown. About 3 minutes. Transfer to plate and set aside. Heat olive oil in same pot, add onions. Cook until onions begin to soften, about 5 minutes. Add cabbage, garlic, sugar, caraway seeds, salt, pepper, sausage and water. Stir until everything is combined Cover and cook for 5 minutes. Remove from heat and let stand for 2 minutes, covered. Mashed potatoes 3-4 medium golden potatoes, peeled and cubed 1 tsp salt 1/4 cream or milk 2 tbsp butter In a big enough pot, add the potatoes and enough water to cover them plus half an inch more. Bring to a boil and cook until the potatoes are soft. Then drain the water and return the potatoes to the pot. Add the salt, cream or milk and butter. Mash until the potatoes are mashed, and the other ingredients are combines. Serve the sausage and cabbage mixture over the potatoes.
