大家好,今天和大家分享這款很適合當三文治的麵包。無需機器,手揉操作就可以完成的麵包。這可愛的蘑菇頭造型麵包,加上軟軟彈彈的麵包體,口感香香軟軟的,搭配自己喜歡的食材放在麵包上,快手又營養的三文治就搞定啦!色香味俱全,超級美味!烘培新手也能成功的在家制作这款麵包哟! 📎食譜 Recipe 材料配方 Ingredients: *溫水 245克+- / Lukewarm water 245g+- 細砂糖 10克 / Sugar 10g 即溶酵母 5克 / Instant yeast 5g 高筋麵粉 350克 / Bread flour 350g 鹽巴 5克 / Salt 5g 植物油 28克 / Vegetable oil 28g *根据面粉吸水性不同,水可以自己再調整一下 According to the different water absorption of flour, you can adjust the amount of water based on your bread flour 製作步驟 Instructions: 1.將溫水,砂糖和即溶酵母放入碗裏攪拌混匀,然後加入高筋麵粉,鹽巴和植物油, 用刮刀攪拌混匀至黏稠的麵團,之後蓋上乾净的佈,室温靜置20分鐘。 Place water, sugar and instant yeast into a bowl and mix well, then add bread flour, salt and vegetable oil into the bowl and mix well with a spatula until a wet dough is formed. Cover the bowl with a clean kitchen towel and let it sit for 20 minutes at room temperature. 2.在桌面撒上適量的麵粉。將麵團取出,用手搓揉8-10分鐘至麵團呈現光滑。如果麵團有点黏手,可以稍微撒一点手粉繼續搓揉。將麵團往下方摺叠的手法,形成一個光滑的圓球。將麵團放入碗中,用乾净的佈蓋上,之後放到室温28攝氏度的地方發酵60分鐘或發酵到兩倍大。 Sprinkle some flour on the table. Take out the dough and knead it with your hands for 8-10 minutes until the dough is smooth. If the dough is a bit sticky, you can sprinkle a little bread flour on the dough. Take the dough and fold it around and underneath itself shaping a smooth ball. Place the dough in a bowl, cover with a clean kitchen towel, and let it ferment for 60 minutes at 28°C room temperature, or until doubled in size. 3.取出麵團,排氣,擀成正方形。將麵團左右覆盖,然後由下往上捲起來,捏緊收口,之後放入已塗抹奶油的烤模里。蓋上乾净的佈,之後放到室溫於30-33攝氏度左右,發酵60分鐘。 Take out the dough, squeeze out the bubbles by tapping and roll the dough out flat into square. Fold 1/3 dough from the left and 1/3 dough from the right toward the center, then roll the dough tightly from the bottom all the way to the end. After done, press the ends of the dough together and seal it tightly. Place the dough into the mold which coat with butter. Cover it with a clean kitchen towel and let it proof for second time for about 60 minutes at 30-33°C room temperature. 4.烤箱預熱180攝氏度,入烤箱烘烤30-32分鐘(每一台的烤箱不同,請大家自己斟酌烤箱温度与时间)。从烤箱中取出, 輕敲幾下排出空氣, 之後將麵包轉移到凉架上晾涼。 趁熱在麵包上塗抹奶油,這能增加麵包的風味。將吐司降溫涼透後再切片。完全放涼後,就可以享用吐司啦!
