I wanted this beer around for a few weeks but I have a feeling it's going to go quickly. This beer ended up being light, refreshing, and easy to drink. Below you'll find the recipe using a few of the Mecca Grade Estate Malts. If you use this recipe I highly recommend using the Mecca Grade Malts. If not I would probably leave out the Rye... or leave it in and be adventurous! Cheers and thanks for watching! Hops: .3 oz Simcoe @ 60 minutes .5 oz Cascade @ 15 minutes .3 oz Simcoe @ 15 minutes 1 oz Cascade @ Flameout Yeast: 1 package WLP320 White Labs American Hefeweizen Ale I built up a .7 L starter 24 hours in advance I fermented this one @ 66F for about a week, raised the temp to 68 for a few, then closed transfer to a keg and carbonated for 1 week @ 14PSI and 39F.
