Shortcut Pulled Pork Loaded Wedges Serves 4 | Prep 10 mins | Cooking 40 mins 480g Slow Cooked Pork Shoulder 750g Coles Chunky wedges 300g Coles Mexico Smokey Salsa Roja 1 cup (120g) grated Mexican style cheese 1/3 cup (80ml) Coles sour cream 1 avocado, diced 100g perino tomatoes, sliced juice of 1 lime 1 jalapeno chilli, finely sliced 2 spring onions, sliced 1/3 cup coriander leaves lime wedges, to serve 1. Preheat oven to 200C (180C fan forced). Cook pork according to packet directions. Remove from the oven and shred pork with two forks, tossing in sauce. 2. Place wedges on a large oven tray lined with baking paper in a single layer. Bake for 10 mins, then turn and bake a further 10 mins. 3. Transfer half the wedges to an oven proof serving dish. Top with half the shredded pork, then dollop with some of the salsa and half the cheese. Repeat with remaining pork, more salsa and cheese. Bake for 10 mins, until the cheese is melted and golden. 4. Combine avocado, tomatoes, chilli and lime juice in a small bowl and toss gently. Season with salt and pepper. To serve, dollop over sour cream, then top with avocado salsa, coriander leaves and extra lime wedges. Serve with remaining salsa on the side.
