Fun, food and a fashion faux pas! Here's a simple and delicious way to celebrate Valentine's Day - make some pizza dough and top it with their (or your) favourite things. Lovers' pizza 500 g white strong bread flour 10 g salt 1 x 7g packet of quick action yeast 300 ml tepid water 50 ml olive oil greaseproof paper Handful of polenta Topping: mozzarella tomato puree Stir the flour, yeast and salt together in a big bowl, so it's well mixed. Make a well in the middle of the flour. Pour in the olive oil and most of the water. Flick the flour from the outside in, to cover the yeast-water as this will stop your hands getting quite so mucky. Then start kneading inside the bowl. If it's too dry, add more water until you get the right consistency. Once the dough has come together, start kneading on the counter. Use a small amount of oil or flour to stop it sticking, but not too much as it will change the consistency of the dough. Knead for about 10 minutes. When it's done, put it in a bowl you've oiled the sides of and place a damp tea towel over the top. Wait for it to "prove" a process which lasts until the dough has doubled in size. Preheat the oven to 230 degrees C/210 degrees fan/gas mark 8. Knock back the dough, which means knocking the air out of the dough, which takes a couple of minutes kneading. Then take a big lump of dough and roll it out using polenta to stop it sticking. Keep the dough still and move the rolling pin about. Place the dough on some parchment paper on a baking tray. Paint with puree and your chosen toppings. Pop in the oven for 10 minutes or so, until the base is crispy.
