The Old Man makes escalope of chicken in gluten-free mock panko crumbs with steamed vegetables, three colour pasta twists (tricolore fusilli) and a salad for a delicious hot weather lunch, served on vintage tableware with vintage cutlery, as part of his drive to encourage viewers to look in the cupboards, garages and attics of family homes to see what treasures are hidden and can be reused today. *there's gluten in the pasta, but surely you knew that* In this episode, he uses Vileroy and Boch Acapulco pattern crockery with Viners Mosaic pattern cutlery, both from the 1970s, salad servers found in a box of his mother's things and never used (probably from a random trip in the Alps) and tablemats made from Welsh Slate. The video itself is a disaster but instead of binning it and starting again as many presenters would, The Old Man has cobbled bits together to prove that in a café at home perfection isn't always the aim: it's good food that people share while enjoying each other's company. Flavour matters more than perfect plating and, often, even when chaos reigns, what ends up on the plate is exactly what you hoped for, even if it is not exactly what you planned. Everyone knows about panko crumbs: they are excellent but they are also expensive, usually in bags containing far more than you need and they are, of course, bread so they contain gluten. What if you could make your own gluten-free crumbs that give an excellent flavour without overpowering the dish, make just what you need so there's no waste and all for a very small cost.
