Made with simple ingredients like sev (or vermicelli), veggies, and a hint of ghee, it's flavorful, satisfying, and easy to whip up. Whether you're a beginner or an expert in the kitchen, this recipe will help you start your day right! Pro tip: prep the veggies the night before to make your morning even quicker. Ingredients: 1 cup rawa sev or vermicelli 1 small potato chopped 1 1/2 onion chopped 1/2 tomato chopped 1/2 small carrot chopped 1/2 tsp chana dal 1/2 tsp urad dal 1/2 tsp mustard seeds 1/2 tsp jeera 1/2 tsp hing 10-12 curry leaves 5 chopped green chilies 3-4 red dried chillies Chopped coriander Ghee Salt as needed Water as needed Instructions for Making Sev Upma: Crush the Sev/Vermicelli: Take the sev or vermicelli and crush it coarsely using your hands or a rolling pin. This helps the sev cook quickly and evenly. Roast the Sev: Heat a pan and add a teaspoon of ghee. Once the ghee is hot, add the crushed sev and roast it on medium heat until it turns golden brown. Keep it aside for later. Prepare the Tempering: In the same pan, add another teaspoon of ghee. Heat it and then add chana dal and urad dal. Sauté until they turn golden and crunchy. Next, add cumin seeds (jeera), mustard seeds, and a pinch of hing (asafoetida). Sauté for a few seconds until the seeds start popping. Add the Chilies and Curry Leaves: Add the curry leaves, chopped green chilies, and dried red chilies. Sauté everything together for a minute until the aroma fills your kitchen. Cook the Vegetables: Now, add the chopped potatoes and carrots. Mix well, cover the pan, and let it cook for 2-3 minutes, allowing the vegetables to soften slightly. Add Onions and Tomatoes: Add the chopped onions and tomatoes, along with salt to taste. Stir everything together, cover the pan again, and cook for another 2-3 minutes until the onions are tender and translucent. Boil the Water: Once the onions are cooked, pour in some water (about 1 to 1 1/2 cups, depending on how soft you want the upma). Let the water come to a boil on medium-high heat. Add the Roasted Sev: When the water is boiling, add the roasted sev to the pan along with chopped coriander. Mix everything well and let it cook for 2-3 minutes until the water has absorbed and the sev becomes soft. If the mixture is too dry, add a little more water. Garnish and Serve: Once the upma is cooked and the water is dried, remove from heat. Garnish with freshly grated coconut (optional) and serve hot for a perfect, quick breakfast!
