Planning, shopping, and preparing whole food plant-based meals is particularly challenging when you are traveling away from home for extended periods of time. Instead of stopping at fast-food restaurants, or convenience stores, I choose to pack all my meals ahead of time and bring them along with me. In this video, my vegan toddler and I will be traveling all day long while remaining 100% whole food plant-based. I prepared meals such as salad, sweet potatoes, black beans, quinoa & lentil mixes, and plenty of fresh fruit and veggies for snacking. During our road trip, we visit the gym, the hair salon, and family friends. Maintaining an excellent form of nutrition for my daughter and me is my number one priority.
