Easy chicken empanadas! perfect snack for every moment of the day! This recipe will give 8 to 10 empanadas... Dough: 300g (2, 1/3 cups) Flour 1tsp Salt 125g (1/2 cup) Cold butter 1 Egg 55ml (1/4 cup) Cold water 5ml (1tsp) Vinegar Filling: 1 Onion 2 Garlic cloves 1 tsp Smoked paprika powder 1tsp Cumin 1tsp Oregano 1tsp Chili powder 70g (1/3 cup) Tomato paste 450g (2-3 pieces, skinless) Chicken thighs 2-3 Hard boiled eggs 1 Red bell pepper (paprika) Pepper & salt Extra: 1 Egg to brush empanadas Process: -Add flour, salt and butter to a bowl and mix a little -Add egg, water and vinegar. -Keep mixing slowly until a dry and homogeneous dough has formed. -DO NOT OVERMIX! dough too wet? add a little flour to it. -Divide dough into 2 pieces, cover well! -Rest in fridge for atleast 1 hour or 1 night! -Prepare chicken filling as shown, let it cooldown as well. -Dough and filling cold enough? -Flatten dough, cut as shown. -Grease edge with water, add filling. -Fold as shown in video. -Put onto baking tray. -Grease with egg. -Bake 200C / 392F for 15-20 minutes (goldenbrown) Enjoy and goodluck!
