Goan Roast Beef is prepared in a pot without using an oven and is a popular dish in every Goan home. Prepared for special occasions and oh so versatile. The leftover slices are utilized for chilly fry or sandwiches. The preparation time for roast beef is minimal and barely takes 5 minutes and is super easy to cook. The Roast beef is ideal for any family gatherings, special occasions, parties, or also for picnics to pack up some roast beef sandwiches. Once the roast is tender it is cut into slices and added back into the pot and mixed with the remaining gravy to absorb all that spicy goodness. Ingredients For marination Beef - 1.5 kg Ginger - 11/2inch Garlic - 1 whole pod or 1 heaped tbsp Cinnamon - 2 inch Black peppercorns - 1 tsp Cumin seeds - 1 heaped tsp Turmeric - 1/2 tsp Cloves - 1 tsp Onion - 1 roughly chopped Toddy vinegar - 3 tbsp Sugar - 1 tsp Salt - approx. 11/2 tsp Kashmiri Chillies - 4 nos For the Roast Oil - 3 tbsp Onions - 4 finely chopped Tomato - 1 fat chopped Water - 1/4 cup Pork Sausages - 10 pieces cut in twos (Optional) Notes: 1. Use beef that is soft and of good quality. The butcher can help with the beef selection. 2. You may marinate the beef for 1 to 2 hours and follow by roasting. However, I have noticed that when refrigerated overnight the roast turns out better. 3. Cook on a medium flame for 45 minutes with stirring in between. 4. Add in pork sausages and roast further fr another 10 to 15 minutes. 5. If in case you have tough beef pieces even after the entire roasting process, do not worry. You may transfer the beef into a cooker, add about 1/4 cup of water, and pressure cook on slow flame until 2 or 3 whistles. This will further soften your beef chunks. 6. Then follow up with the slicing step. 7. While slicing bear in mind to cut against the grain. This will give you soft tender roast beef slices. If you slice in the same direction as the meat grain you will end up with long chewy strings which are tough to chew. And you don't want that.!
