Some time ago we made wadi or dry lentil nuggets and left them to dry. That was the first part of this video, link is as follows • Traditional Wadi | Lentil nuggets - Part 1... The dried wadi lasts for a long time, properly stored in glass containers. Now, we are making this delicious curry with them, which is seriously tasty! Ingredients: 100gr dried wadi 400gr aubergine (peeled in stripes, chopped and left to soak in salty water) 100gr potatoes (peeled, chopped and left to soak in cold water) 100gr tomatoes, blended 5 tablespoons oil 1 teaspoon ginger, garlic, chilli, paste 1/4 teaspoon turmeric 1/4 teaspoon red chilli powder 1 teaspoon salt 1 teaspoon dhana jeeru 1/4 teaspoon garam masala 700ml hot water For garnish: 2 tablespoons chopped coriander and 1/4 teaspoon ground cumin I do suggest you make this curry; you have to be patient to let the wadi completely dry first, but it's well worth the wait!
