Banana Peanut Butter Oat Cookies 2 cups quick oats 2-3 over ripe bananas ½ cup natural peanut butter ½ tsp vanilla extract Optional add-ins: ½ tsp pure maple syrup, ½ cup chocolate chips, crushed pretzels or dried fruit or nuts Instructions • Preheat oven 350°and line baking sheet with parchment paper • In large bowl, mash bananas with fork until paste-like. • Add in peanut butter, oats and vanilla and mix until combined. • Stir in add ins. • Shape and drop dough onto baking sheet • Bake ~15 minutes until bottoms are slightly brown. • Let cool completely and store in airtight container. Makes about 16 cookies
