In this easy low carb recipe, pork ribs are wrapped with dried lotus leaf and then steamed. The result is a unique dish with tender pork ribs infused with fresh earthy tea scent and sweet tea-like taste. It is a great dish to share and consume with rice at family dinners or any sit down Chinese dining parties. Unwrap the parcel in front of the diners to excite not only their sense of taste but also the sense of smell and sight. Ingredients 500g bite size pork ribs 200g red capsicum 200g yellow capsicum 2 stalks of Chinese parsley ½ thumb size fresh root ginger 4 garlic cloves ½ TSP Chinese 5 spices 3 TSP light soya bean sauce 1 TBSP dark soya bean sauce 1/2 TSP sesame oil 1 TSP corn flour (for marinate) 1 TBSP corn flour (for cleaning) Pepper 1 big dried lotus leaf Steps 1) Rinse the pieces and drain. Add corn flour and some water. Mix with the pieces to ensure each piece are coated with the solution. Massage for a minute or so and then drain off. Rinse and drain with clean water again. Dry the pork ribs with paper towel. 2) Add Chinese 5 spices, followed by light and dark soya bean sauce, some pepper, sesame oil and corn flour. Mix and massage thoroughly. Then set aside for at least 30min. 3) Cut the big lotus leaf into halves. Use a big pan or wok, boil some water deep enough to soak the lotus leaf. Place the lotus leaf into the boiling water for 1 min. Flip and move the leaf so that the all parts can come in contact with the water. Turn off heat and soak for 10min. Remove the lotus leaf. Rinse the leaves under running water. 4) Select a deep high heat resistance dish and arrange the lotus leaves with the greener upper side facing up. Cut the spiny ends of the leaf to make it easier to fold. Set aside. 5) Slice ginger into thin slices. 6) Peel and mince the garlic. 7) Cut parsley into lengths of about 3 inches long. 8) Cut the capsicums into halves and de-seed. Cut into strips. 9) Place the capsicum slices, marinated ribs, ginger slices, garlic and parsley in this order.
