This is one of the recipes from my mom’s recipe book and came from one her ceramic students who became a close friend Marinated Carrot Salad 2 lbs carrots peeled and cooked in water until tender crisp. About 5 minutes. Drain and rinse with cold water 1 green pepper sliced 1 onion sliced Sauce- One can tomato soup 1/2 cup Cider vinegar 3/4 Tbsp yellow mustard 1/2 cup Sugar 3/4 tsp Salt Dash of pepper Layer veggies in bowl. Mix in sauce. Cover and refrigerate. Stir occasionally first two hours. Flavors are better after a few hours or overnight. This lasts a week in the refrigerator Thank you for watching!
