Dough: ½ cup softened butter (≈110 g). ¼ cup granulated sugar (≈50 g). 2 tsp vanilla sugar or 1 tsp vanilla extract. ¼ tsp salt. 3 medium egg yolks (≈50 g total). 1 ½ cups all-purpose flour (≈180 g). ½ tsp baking powder. Meringue: 3 medium egg whites (≈110 g). Pinch of salt. 2/3 cup + 1 Tbsp granulated sugar (≈140 g). 2 tsp vanilla sugar or 1 tsp vanilla extract. 1 tsp lemon juice. Sweets and chocolate (optional). Bake: 150 °C ≈ 300 °F for 25–30 minutes (low and slow for crisp outside / slightly tender inside). Store in an airtight container at room temperature 3–5 days in cool, dry conditions. ✔️Variations. Chocolate-dipped: melt dark chocolate and dip cookie bottoms after cooling. Citrus: add ½ tsp orange or lemon zest to dough for brightness. Nutty crunch: press a chopped almond or hazelnut into the dough before piping.
