This allows the gluten to start forming naturally. ⸻ 3) First fold & light slap-fold After 30 minutes: • Do a stretch & fold from all four sides. • Perform a few light slap-folds just to help the dough tighten and round up. ⸻ 4) Second rest – 30 minutes ⸻ 5) Second fold Give the dough a few gentle folds to strengthen it. ⸻ 6) Third rest – 30 minutes ⸻ ⚪ 7) Dividing into dough balls After resting: • Divide the dough into 6 pieces (90 g each). • Let them rest uncovered for 10 minutes so shaping becomes easier. ⸻ ⚪ 8) Oval shaping • Lightly flatten each dough ball. • Fold the top edge toward the center. • Fold the bottom edge toward the center as well. • Roll the dough up into a log and seal the seam. • Using both hands, gently elongate and shape it into a smooth oval. ⸻ ⚪ 9) Final proof – 30 minutes Place the shaped ovals on a tray and cover them with a towel.
