Ingredients: 1 unbaked 9" deep dish pie crust 3 eggs 1/2 tsp salt 1 3/4 cups scalding milk 2/3 cups sugar 1 tsp vanilla, see below for options 1 Tbsp butter, melted Directions: Preheat oven to 450 degrees. Beat eggs slightly. Mix in sugar, salt, vanilla, and butter. Slowly pour in milk to temper the eggs. Mix well. Pour into an unbaked 9" deep dish pie crust. Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees and bake an additional 225-30 minutes. Options: Substitute coconut extract for the vanilla and add about 1 cup of flaked coconut to the custard mixture before baking.
