This is one of the most comforting dishes in my book despite what it actually is. Don't judge a book by it's cover. Ingredients: 1-2 Pounds of pig’s feet 2 Cubes of red fermented tofu (1-2 tsp juice from the can) 2 Tbsp Rose wine or Shaoxing Wine 2 Pieces of rock sugar 1.5 Cups of peanuts (that have been soaked in warm water for 6-8 hours) 1 Piece of ginger 2 Cloves of garlic Neutral oil Chicken broth Water White Pepper Orange Peel Oyster Sauce Soy Sauce Procedure: In a large pot with cold water, add your pigs’ feet then bring it up to a boil to blanch for 10 mins. When it comes to a boil, and it starts to get all red and dirty, turn off the heat and dump out the hot water. Use a strainer if you have. Then rinse and clean each pigs foot, checking for hair. Then in another pan, add some neutral oil, followed by the garlic, ginger, and the fermented tofu. Then add the pig’s feet and stir fry on medium heat. Add chicken broth and water to cover the pig’s feet. Then add white pepper, rock sugar, and orange peel. Next add your peanuts and more water or chicken broth to fully immerse the pig’s feet. Bring to a boil and cook for 45min to 1 hour. After 45 min add Oyster sauce and Soy sauce to taste. We reheated it for our meal the next day. Tiktok https://www.tiktok.com/@michael.nicas...
