Mix dry ingredients: In a bowl, combine flour, baking powder, sugar, and salt. 2. Combine wet ingredients: In another bowl, whisk together the egg, milk, melted butter (or oil), and vanilla until smooth. 3. Bring the mixtures together: Add the wet ingredients to the dry ones and mix gently—just until you no longer see dry flour. Don’t overmix or the pancakes will turn dense. A few small lumps are fine. 4. Rest the batter: Let the batter sit for about 10 minutes to help it become fluffy. 5. Cook: Heat a non-stick pan over medium heat and lightly grease it.
