Detailed Ragi Idli Recipe Ingredients (Ragi Idli) 1 cup rice (idli rice or jada tandul) 1 cup ragi (nachani) 1/2 cup urad dal 2–3 tbsp methi seeds 1/2 cup poha Water as needed Salt to taste Oil or ghee for greasing Method Soak Rice and Ragi Wash rice and ragi separately 4–5 times until the water runs clear. Add enough water and soak together for 8–10 hours. Soak Urad Dal Wash urad dal 4–5 times and soak it separately with methi seeds for 8–10 hours. Soak Poha After soaking time is complete, soak poha in water for 5 minutes and keep aside. Grind the Batter Grind soaked rice and ragi together into a thick paste. Transfer to a large bowl. Grind soaked urad dal, methi seeds, and poha into a smooth, fluffy paste. Mix and Ferment Combine both batters and mix well using hands to incorporate air. Cover and ferment for 10–12 hours or until the batter rises well. Prepare Idlis Add salt to the fermented batter and mix gently. Grease idli plates with oil or ghee and pour batter into molds. Steam Steam for 10–15 minutes on medium heat. Switch off the flame, let it rest for a few minutes, then remove idlis carefully. Serve Hot Serve soft ragi idlis hot with coconut chutney.
