Broccoli Cheese Soup (Broccoli Cheddar)

Tastes like Panera Bread's broccoli cheese soup! This soup takes mere minutes to put together and it is warm, cozy, and delicious! Recipe: Spray your pan/boiler with non-stick spray. Sauté ½ stick butter with 2 heaping T. of finely chopped onions. Add ¼ cup flour. Slowly add 2 cups of heavy whipping cream (or half n half) stirring constantly. Stir in 2 cups of chicken broth. Add 3 cups of finely chopped broccoli (I pre-cook my broccoli & carrots in microwave so the soup cooks faster) Add ½ cup of finely chopped carrots. (Some people use the julienne chop, I don’t.) If your vegetables are raw, you’ll need to cook on medium for about 25 minutes. Mine is done within minutes since my vegetables are precooked. After cooked, add 2-3 cups of cheddar cheese. Salt & pepper to taste (instead of salt, I use 1 t. garlic salt) We love this soup served with hot sourdough bread! This is a creamy thick soup.
