Recipe for Black Eyed Pea Soup/Swamp Soup/New Years Soup (this recipe has a lot of different names!) Sauté ½ cup each of chopped onion, finely chopped carrots, and celery in olive oil. In a separate skillet, fry 1 lb. of sliced smoked sausage (I used Conecuh sausage). Fry a few minutes in a T. of bacon grease. In your soup pot, add: 2 small cans spinach (I only did 1 because Preacher doesn’t like spinach) 2-3 small cans black eyed peas 2 cups chicken broth (more depending on how thick/thin you want your soup) 2 small cans diced tomatoes (I used Rotel brand and it had green chilis in it.) Add your precooked sausage and the sauteed onions/carrots/celery ADD spices: ½ t turmeric, ½ t paprika, ½ t thyme, 1 T minced garlic (to your taste), 1 t chopped jalapenos, dash of hot sauce, salt and pepper Let it cook long enough for everything to meld together. It doesn’t take long at all. We served it with cornbread. Variations: Could use liquid smoke, green chiles, creole seasoning, sriracha, worcestershire sauce, oregano, etc. Ideas are endless!
