For dal- 1 cup tur dal 1 tsp turmeric powder salt oil for tempering- 1 tsp cumin,musturd,5 garlic cloves, few curry leaves, 1 green chilli and pinch of hing coriender kokum method- soak dal for some time. pressure cook for 10 mins. add salt turmeric and few drops of oil while pressure cook. once done, give tempering of given ingredients. add kokum ,small piece of jagerry and chopped coriender and bring it to boil. for mix sabzi- 2 cup mix soak pulses 1 onion,1 tomato ridge gourd and pupkin coriender 10 garlic cloves and 1 inch ginger Method- heat oil, put 1 sp cumin, add onion and cook , add 1 tsp turmeric, 3 tsp red chilli powder, 1 tsp cumin, 1 tsp coriender and 1 tsp garam masala powder. mix well. add pulses, all veggies , salt and 2 tbsp roasted dry coconut ( ground). pressure cook for 10 mins. once done add coriender and mix well. for aloo sabzi- boil aloo- 3 1 onion,1 tomato method- heat oil give tempering of 1 tsp cumin,1 tsp musturd, 2 dry red chillis, curry leaves, 5 garlic cloves and hing. saute. add onion and tomato cook for few mins. add boiled potatoes, turmeric, salt and coriender. mix well. cook for 2 mins and done for semolina kheer- semolina - 4 tbsp milk 1 glass sugar 3 to 4 tbsp cardamon powder saffron method- heat 2 sp ghee, roast semolina on low flame. pour glass of water. cook. once it becomes thick, add milk, sugar, nuts ,saffron and cook for few minutes. shrikand- hung curd- 1/2 kh sugar saffron method- beat curd, once become smooth, add sugar and mix well. keep mixing till it becomes light creamy. add saffron and mix well. for onion pakoda- onions- 2 slice cut 4 tbsp gram flour 1 tsp turmeric 1 tsp red chilli 1/2 tsp coriender,cumin salt method- add salt and turmeric to slice onions. mix and rest for few mins. add all masalas and gram flour. put require water to make proper batter. heat oil and shallow fry for puri and chapati- take flour, put salt,water and make a soft dough. for pooris put powder sugar in dough and knead . deep fry poori in ghee make chapati and roast Ingredients for thali 2 for pulao- Basmati rice- 2 cups In veggies- peas,carrot,cauliflower , french beas and onion. 10 garlic cloves, 1 inch ginger Masalas-1 sp turmeric, 1 sp cumin,1.5 sp coriender and 1 sp garam masala powder,1 sp red chilli powder. Salt Oil ghee For tempering ( whole spices)- of 2 bay leaves, 4 black pepper corn, 3 cloves, 1 inch cinamon stick , 2 green cardamon , 1 black cardamon and 1 sp shahi jeera Wash and soak rice. In pressure cooker heat oil, give tempering of 2 bay leaves, 4 black pepper corn, 3 cloves, 1 inch cinamon stick , 2 green cardamon , 1 black cardamon and 1 sp shahi jeera.once done. Add slice cut onions. Saute. Add all veggies and saute for few mins. Add 10 garlic cloves and 1 inch ginger(paste or crushed ). Saute.add soaked rice and mix well. Add all masalas and salt. Mix well. Add hot water . add 2 sp ghee .mix well. Pressure cook for 10 mins on low to medium flame. Chana masala- Soaked chole- 2 cup 2 onions 2 tomatoes 7 garlic cloves, 1 inch ginger For tempering- 2 bay leaves, 2 pepper corn, 2 cloves, cinamon stick,cumin seeds, 1 green chili and few curry leaves. Masalas- 1 tsp turmeric,3 red chilli, 1cumin,1 coriender and 1 sp chole masala powder. Method- Heat oil, give tempering, add onions and tomatoes. Cook till it becomes soft . add garlic ginger. Saute. Add all masalas. Mix well. Add chole, salt,glass of water, 2 tbsp dry ground roasted coconut. Pressure coook for 10 mins or take 2 whistle. Once done garnish with chopped coriender For tomato saar- 4 tomatoes Boil tomatoes. Peel and blend into puree. For tempering- Heat 2p ghee, add 1sp cumin,musturd, 1 green chillis, few curry leaves and garlic ,asafetida. saute. Add 1 sp red chilli powder, 2 sp sugar mix well. Add tomato puree and water. Add salt and bring it to boil. Once done add chopped coriender and serve. For dahi raita- Chopped veggies(onion,tomato,green chilli and cucumber) Take curd, add salt and little water. Beat well. Mix veggies and salt and mix. Raita is ready. For mirchi bhaji- Take green chilli, slit . add salt. Take 2 tbsp gram flour, add salt,salt and watwr. Mix well. Dip mirchis in batter and deep fry. For chapatis- Take wheat flour, add salt and water ,knead into soft dough. Put oil and knead again. Once done make chapatis. In a plate arange all items and serve.
