Lithuania, and indeed the other Baltic states, are facing a rapidly approaching gastronomic revolution. While young chefs and restaurant owners prepare to make the necessary changes in order not to inherit a dysfunctional culinary system, sometimes we overlook the most important element: the customer. How have eating trends changed over the last five years in Lithuania, and what can people expect in the near future – bizarre foods that look better than they taste? Gastro science to confuse everyone? Gastronomy now has an important role to play in our planet’s future, but in order for producers and restaurants to fully adopt sustainable practices, the consumer has to know what they are, and indeed how to be on board with the idea. Our planet’s future is of some urgency, and both restaurant and diner can play a crucial role in it. Gavin Stewart is a lecturer in Applied Linguistics at the Faculty of Social Sciences, Arts and Humanities of KTU, a private chef and restaurant consultant, and the Vice-President of the Historical Medieval Battle International Association.
