Its easter and though its a lockdown you dont want to cook? Try this no cooking easter egg recipe with cashew nuts. Easy to make within 40 mins to an hour. All you need is Cashew, Sugar, Rose water, Almond essence. Food colours is a bonus. Easy Pezy Easter Egg Recipe Ingredients: 50 gms Cashew ( Made me around 18 - 20 mini 1 inch eggs) 100 gms Powdered Sugar ( u can reduce this a bit. You can also use sugar and make a powder in a grinder or work with icing sugar as well.) 1 little tsp almond essence 1/4 to 1/2 cup rose water Food/edible colour ( I prefer liquid colours) Moulds ( Bonnets, Bunnies,Eggs, Hens, etc. You can also just plain shape them in your palm. Dont need no moulds :) A little extra powdered sugar for dusting the moulds Also if you want you can double the above quantities to get more eggs. I like to make little batches cause I live alone. And now with the social distancing i will take a year to finish these as well. hehe How to: Simple Take the powdered Cashew in a bowl Add the powdered sugar (make sure before u add that there are no lumps. you can sift it or pulse it in a blender for a second ) mix it well. Add the almond essence Mix again Then start adding in the rose water a little at a time. Keep checking consistency. When the dough starts coming together then you know its done. you can place it on a flat surface or your clean kitchen platform or any wide container and knead the dough a little. If it is too sticky or tacky just add a little bit of powdered sugar. If its too dry then add a little rose water. Separate the dough into various parts as per the colours you plan to use. I like pastel colours. Keep one portion its original colour. Now you can shape them into moulds with different colours or u can simple rub it in your palms and shape them like eggs. I like mini eggs so they are bite sized and easy to consume and also if you have to give out too many. :P . These should be good for 2 weeks in the refrigerator. Ill share a cooked version of the easter eggs next. Ideally i would also decorate them with royal icing and then put them in little transparent sheets available at Arife ( Bandra/Andheri/Crawford) or cheap Jack ( Bandra, Mumbai, India) You will get most of the things related to baking at the both the stores above in Mumbai, India Hope you enjoy the recipe.
