Well… a loose adaptation of it. While practicing social distancing at home it’s important to continue to nourish your body with delicious food. Let’s tackle a dish that many people think is hard to make and break it down to simple ingredients and easy steps. Who’s in?! If you recreate this dish please tag me as I would love to see and feature your creation! #chrissyteigen #cravings #StayHome Recipe ------------------------------------------------------------------ Ingredients: o 1 ½ cup dried mushrooms o 2 cups of hot water o 3 cups chicken broth o 2 tablespoons butter o 1 shallot diced (*substitute ¼ onion) o 1 cup arborio rice (*substitute short grain white rice) o ½ cup dry white wine (*substitute rice wine… yes it worked) o 1 tsp salt o 1 cup parmesan cheese o ½ frozen peas (*substitute fresh peas if in season, canned peas are a last resort but they work!) o Freshly ground black pepper o Greens to garnish (green onions, parley etc) **DO NOT substitute with instant or brown rice Prep: o Rehydrate mushrooms by combining with hot water, let rest for 10 minutes o Dice shallot o Chop bacon o Drain mushrooms saving broth o Chop rehydrated mushrooms Cooking: o In a small saucepan combine chicken stock and mushroom stock o Leave at low heat to use later o In a medium saucepan over medium/high heat cook bacon o Add shallots and cook until translucent o Add butter and stir combine o Add rice and let toasted for 2 minutes until butter is absorbed o Gradually add in 1 cup mushroom-chicken stock o Cook until absorbed, continue to add ½ cup of broth and stir until absorbed o Repeat for 20 minutes and cook until rice is tender with a firm center o Add pepper, parmesan and peas o *Add more broth to thin out risotto to your liking Serve: o Top with black pepper, salt and greens to garnish Mentioned ------------------------------------------------------------------ Giada’s Lobster Linguine: • How to Make Giada's Lobster Linguine | Gia...
