Pre-heat oven to 325° F / 162.8° C Ingredients: 3 small apples, chopped 3/4 cup oil, 170 g 1/2 cup granulated sugar, 100 g 1/4 cup brown sugar, packed, 55 g 2 medium eggs 1 1/2 cup all-purpose flour, 173 g 1 1/4 tsp cinnamon, 3.25 g 1/4 tsp nutmeg, 0.6 g 1/2 tsp baking soda, 2.8 g 1/4 tsp salt. 1.48 g 1 cup toasted chopped walnuts, reserve 1/4 cup 1 tsp vanilla, 4 g Directions: Put chopped apples in lightly salted water with a dash of lemon juice while you prepare the batter. Beat together oil and sugars, then add eggs until blended together, and set aside. In separate bowl, sift all dry ingredients together. Add dry ingredients mixture to the wet ingredients mixture until well combined. Fold in well drained apples, walnuts and vanilla, fold all together. Spread evenly in a lightly oiled and floured 8 x 8 inch or bread pan. Bake at 325 for 50 to 55 minutes until toothpick inserted comes out clean. Let cake cool in pan 15 to 20 minutes before transfering to a cooling rack to cool completely. Drizzle glaze over the cake. Glaze: In a saucepan combine 1 tbsp butter, 14g, 1 tbsp brown sugar, 13g, 1 tbsp granulated sugar, 13g, 1/4 tsp vanilla,1.1g, and 1 tbsp milk. Bring to a boil for 1 minute.
