These are a light and delicious soft melt in your mouth lemon cookie. You only need 4 ingredients to make them. They are easy and fun to make, you will love them! Bake with me and learn how to make them yourself.. hope you enjoy! ⋆˚♡˖° Will make 12 cookies using about a 3 inch size cookie cutter, or 12 and a half cookies if using about a smaller 2 inch cookie cutter. Cookie dough 1/2 cup salted butter (softened to room temperature), 115 g 1/3 Cup powdered sugar, 40 g 1 Teaspoon lemon zest, 5 g 1 Cup all purpose flour, 120 g Lemon glaze 2 Tablespoons fresh lemon juice, 120 g 1 Cup powdered sugar, 30 g In a bowl, cream butter until smooth. Add powdered sugar and mix for 2 minutes. Add lemon juice or lemon zest. Add flour and mix until dough comes together. Chill dough for 30 minutes. Lightly flour your rolling surface and form dough into a disc and lightly flour the top. Roll to a 1/4 inch thickness and cut cookies using a 2 or 3 inch cutter. Re-roll and cut your scraps as needed to make more cookies. Recipe should make 12 cookies if using a 3 inch cookie cutter, or makes 12 and a half cookies if using a 2 inch cookie cutter. Place on prepared cookie sheets and bake at 350F/175C, 10-12 minutes for larger cookies, or 8 to 10 minutes for smaller cookies, until the bottoms are just beginning to brown. Let cool on the pan for a few minutes, then move to a wire rack to finish cooling. For the glazed icing Combine lemon juice and powdered sugar in a small bowl and whisk until smooth. If too thin, add a little bit more powdered sugar a little at a time. If too thick, add a bit more lemon juice a little at a time. Next, dip cookies in lemon icing, and add sprinkled sugar topping if desired, and allow 2 hours to set, the glaze will harden. Hope you enjoy!⋆˚♡˖°
