No matter the occasion our holiday smoked turkey is really simple to make and is perfect for a large festive gathering of family and friends. Turkey Brine ingredients: 4 quarts water 2 cups of salt 2 cups brown sugar 1/2 cup red wine vinegar 1/4 cup peppercorns 1/4 cup bay leaves 1 bulb garlic cut in half 2 small apples sliced in rounds 500ml beer Brine Recipe: Bring to boil then turn down heat to simmer for 10 minutes Then let cool down Once cool pour over turkey and then fill with water until turkey is submerged completely. Allow to sit in brine overnight. Turkey rub ingredients: 2 tbs of cooking salt 1.5. tbs of paprika 1.5 tbs of dried thyme 1 tsp dried basil 1 tsp onion powder 2 tbs of garlic powder 2 tsp of mild chilli powder Palm full of brown sugar Combine all and rub generously over the turkey.
