You must try this Mediterranean Inspired Tart! This is another of my favorite no-recipe-recipes that you can customize to your own taste and by what’s in your refrigerator. I’m partial to the Mediterranean vibe, so my veggie selection reflects that. The Everything Bagel Seasoning may not be traditional, but the flavor is outstanding, and my family loves it. I think of this tart as a method more than an exact recipe. Once you understand the ease of working with puff pastry, you can make many varieties of this tart. It’s also delicious if you add shrimp or chicken to the tart. I hope you make this tart (or a variation of it) and that you will stock up on puff pastry to be ready when the cooking inspiration strikes. Enjoy! Ingredients: • 1 sheet puff pastry thawed • 1 cup ricotta cheese • ¼ cup thinly sliced red onion • ½ cup thinly sliced pepper – any color • ½ cup sliced olives • ½ cup sliced cherry or grape tomatoes • ½ cup sliced mushrooms • 1 cup shredded mozzarella cheese or more to taste • 2 tablespoons Everything bagel Seasoning • Salt and pepper to taste Directions: • Preheat oven to 400 and move your rack to middle. • Place thawed puff pastry sheet on a piece of parchment paper on your work surface. • Gently score the edges of the pastry with a paring knife approx ½ inch all around. Do not slice all the way thru. • Cover the pastry with the ricotta cheese and add salt and pepper to taste. • Layer on the rest of the vegetables and sprinkle with Everything Bagel Seasoning. • Cover with shredded mozzarella cheese. • If desired, drizzle with olive oil to taste. • Transfer parchment paper to a sheet pan. • Bake 25-30 minutes till cheese is bubbly and pastry edges are golden brown. • Cool on a wire rack a few minutes before slicing and eating.
