If you like coconut, this coconut cake is a must-try. This delicious dairy-free coconut cake is made of a sponge cake, pastry cream made with coconut milk, and lots of coconut flakes. Ingredients: Sponge cake 4 eggs sugar 115g. flour 90g. a pinch of salt Coconut Pastry Cream 2 eggs yolks sugar 75g. vanilla extract half teaspoon coconut milk 250g. corn starch 20g. dried coconut flakes 150g. vegetable milk 2-3 tablespoons 38x26cm pan Instructions: 1. For the coconut pastry cream, pour the coconut milk in a saucepan and turn on the heat on medium level. Add half a teaspoon of vanilla extract. 2. Meanwhile, whisk the eggs yolks with sugar. Once the milk reached the boiling point, reduce at minimum the heat and pour the yolks mixture. Start stirring, while increasing a bit the heat. Continue to stir until you obtain a dense cream. 3. Pour the coconut pastry cream into a clean bowl, cover with plastic wrap and let it to cool down at room temperature, then in the fridge. 4. For the sponge cake, mix the eggs with sugar until foamy (about 10-15 minutes). Then sift the flour and salt and combine. 5. Pour the mixture into a rectangular tin and bake in the preheated oven at 180°C for 12-15 minutes. 6. While still warm, cover the cake with plastic wrap or a clean towel and let it cool down completely. 7. Divide the cake into two parts and brush with some vegetable milk or sugar syrup. 8. Spread the coconut pastry cream (keep aside a couple of tablespoons for the top). Then, add dried coconut flakes. 9. Brush the second cake with vegetable milk. Cover it and spread with the rest of the cream. 10.
