As we wrap up the foundation of our little cottage, we are feeling really good about most of our decisions thus far and feel this is actually something we can effectively build on! Of course there are things we realize now we could have done a bit differently, and long term, I know there will be more, but I think we covered our bases fairly well and we're excited to move forward! Next up we will start chiseling the timbers for our timber frame. Shepherd's Pie Recipe 2lbs ground beef 4-6 russet potatoes 2-3 carrots, peeled and chopped 1 onion, peeled and chopped 1-3 cloves garlic, peeled and minced 1 bag frozen organic green peas 3 tbsp flour Half stick butter 1/4 cup cream 1 cup stock or water Butter, tallow or lard for sautéing Salt and Pepper Thyme Add chopped potatoes to boiling water and cook till tender. Drain off most of the water, add the half stick of butter and cream, and mash. Season well with salt and pepper, taste, and set aside. In a large cast iron or dutch oven, brown the ground beef and season well with salt, pepper and thyme. Add the garlic and onions and continue sautéing for 3-5 minutes. Add the carrots and peas, then sprinkle the flour over the top of everything and stir to coat. Cook for 3-5 minutes, then add the stock or water to deglaze and make a bit of a sauce. It shouldn't be too runny but there should be a decent amount of liquid. It will thicken as it cooks. Taste and adjust seasoning if needed. Add your potatoes on top and top with a few pads of butter and flaky sea salt (optional). Bake on 350F for 30-45 minutes and enjoy. Thank you as always to our editor, Luke Garmon!
