Phanu Garhwali Traditional Food || Uttarakhand Phanu --------------------------------------------------------------- Phanu is a thick, protein-rich curry made by slow-cooking a mix of soaked and coarsely ground lentils (like gahat/horse gram, arhar, moong, etc.). It is lightly spiced and usually eaten hot with rice or mandua (ragi) roti. It is especially popular in winters because it is filling and warming. 🍲 -------------------------------------------- Ingredients (2–3 servings) Mixed dals – 1 cup (traditionally: gahat / horse gram, moong, arhar, chana dal – any 2–3 mixed) Water – as needed Garlic – 5–6 cloves (crushed) Cumin seeds – ½ tsp Hing (asafoetida) – a pinch Turmeric powder – ¼ tsp Salt – to taste Mustard oil or ghee – 1 tbsp ------------------------------------------------ 💡 Method Soak all the dals together for 6–8 hours. Grind them coarsely (not a smooth paste). Heat oil/ghee in a pan. Add cumin seeds and hing. Add crushed garlic and sauté lightly. Add the ground dal mixture and stir well. Add water little by little and cook on low flame, stirring often. Add turmeric and salt.
