I’ve been keeping these pumpkins and winter squash on my counter since the end of the summer. We grew them in our garden, which if you don’t know is one of my favourite things to grow since it stores so well. PUMPKIN SOUP 2 tablespoons olive oil 1 small onion, diced 2 cloves of garlic, minced 1 teaspoon ginger, minced 1 tablespoon mild curry powder ½ teaspoon garam masala spice blend 3 cups vegetable stock 1 (14 ounce) can coconut milk (plus more for serving) 3 cups pumpkin puree (or butternut squash) salt and pepper (to taste) pumpkin seeds, toasted (optional, for topping) fresh cilantro, chopped (optional, for topping) PUMPKIN CHOCOLATE CHIP COOKIES 1 cup white flour 1 cup whole wheat flour 1/4 cup coconut sugar 1 teaspoon baking powder 1/2 teaspoon salt 1/2 teaspoon cinnamon 1 teaspoon vanilla 1/4 cup pumpkin 1 egg 1/2 cup maple syrup 3 tablespoons olive oil 1/2 cup mini chocolate chips (optional) Preheat the oven to 375 degrees. In a large bowl, combine the flour, sugar, baking powder, salt, and cinnamon. In a smaller bowl, whisk the vanilla, pumpkin, egg, maple syrup, and olive oil. Add the wet ingredients to the larger bowl with the dry ingredients – stir until just combined. Add the mini chocolate chips and stir just a few times to distribute them throughout the batter.
