Simple Mixed Vegetable Stir-Fry | Cooking with What’s in the Fridge Today’s video is all about cooking with what you already have. I used a few simple ingredients from my fridge and made a quick, homemade mixed vegetable stir-fry. Ingredients: Onion Cabbage Eggs Tofu Steps: Cut ½ an onion and ½ a cabbage into chunks Crack 2 eggs into a bowl, add a pinch of salt, and beat well Slice the tofu into about 1 cm thick pieces and lightly coat the surface with starch Heat 1 tablespoon of oil in a pan. Pan-fry the tofu for about 2 minutes per side until golden, then remove and set aside. Scramble the eggs, remove from the pan, and set aside. For the cabbage, add it to the pan without oil first and cook to dry out the moisture. Add the onion and stir-fry evenly, then add 1 tablespoon of oil and 1 tablespoon of minced ginger, stirring until fragrant. Add the eggs back in, season with: 2 tbsp soy sauce 1 tbsp oyster sauce Finally, add the fried tofu and stir-fry everything together until well combined. This improvised mixed vegetable stir-fry helped me clean out my fridge and made a simple, nutritious meal.
