Fermenting mangoes is a great way to bring out their natural flavors and add a tangy twist to your snacks. Whether you're new to fermentation or looking for a fresh idea, this tutorial will walk you through the process and give you tips to get the perfect result. You'll need: ~ Ripe mangoes ~ 1–2 tablespoons of salt (depends on your preference for saltiness) ~ Water (to submerge the mangoes) ~ Optional: spices like chili flakes, ginger, or garlic (for flavor) ~ A clean jar or container with a lid 1. Peel the mangoes, remove the pit, and chop them into small chunks or slices, depending on your preference. 2. Dissolve the salt in some water to create a brine solution. You’ll need enough water to fully submerge the mango pieces in the jar. This will help with the fermentation process. 3. Place the chopped mangoes into a clean glass jar. If you're adding any spices like chili flakes, ginger, or garlic, now's the time to include them. Make sure to pack the mango pieces tightly but not too forcefully. 4. Pour the saltwater brine into the jar, ensuring that the mango pieces are fully submerged. You can use a weight or a clean stone to help keep the mangoes submerged. 5. Close the jar with a lid, but not too tightly to allow gases to escape during fermentation. Leave it at room temperature for about 2-4 days, depending on the temperature of your environment. Check daily to ensure the mangoes stay submerged and to monitor the fermentation process. 6. After 2–3 days, taste the mangoes. If they’ve reached the desired level of fermentation, you can move them to the fridge to slow down the fermentation process. If you want a stronger ferment, let it sit for longer. Important notes: ~ Fermented mangoes will have a tangy, slightly sour taste, and they pair well with various dishes or can be eaten as a snack. ~ If you prefer a sweeter ferment, you can add sugar or honey, but traditional fermentation uses just salt.
