Prawns Ghee Roast | Prawns Ghee Roast Mangalorean Style | Prawns Ghee Roast Recipe | How To Make Prawns Ghee Roast | Prawns Ghee Roast Gravy | Prawns Ghee Roast Dry | Shrimp Ghee Roast | Prawn Ghee Roast Masala Ingredients for Prawns Ghee Roast: (Tsp- Teaspoon; Tbsp- Tablespoon ) Large Prawns - Net 400 gms. after shelling and deveining Marinate prawns with: Salt- 3/4 tsp Turmeric powder-1/4 tsp Lemon juice -1 tsp Dry roast: Coriander Seeds- 1.5 tsp Cumin Seeds- 1 tsp Fennel Seeds- 1 tsp Black Peppercorns- 1.5 tsp Methi (Fenugreek) Seeds- a pinch (1/8 tsp) Dried Byadgi Red Chillies-9-10 For Masala paste: Dry roasted spices given above Kashmiri Chilli Powder-1 tsp Ginger chopped -1.5 inch piece Garlic cloves- 6 cloves Jaggery powder-2 tsp Salt-pinch Tamarind juice - 3 tbsp Water- 5-6 tbsp Other Ingredients: Ghee (Clarified Butter)- 4 tbsp + 2 tbsp Onion, fine chopped- 120 gms Curry leaves- 15-20 leaves Preparation: Shell and devein the prawns. Wash and strain the water, pat dry the prawns. Soak the tamarind (imli) in some water and take out the juice/pulp. In case using readymade tamarind pulp add very little, maybe very sour. Peel the ginger & garlic and chop the ginger. For the masala, first dry roast the spices on low heat for 3-4 mins. Allow it to cool and then add the roasted spices to a grinder. Also add the chopped ginger, garlic cloves, Kashmiri chilli powder, jaggery powder and a pinch of salt. Coarse grind to a powder and then add the tamarind juice & 5-6 tbsp water. Blend it to a smooth paste. Now marinate the prawns with the ingredients specified earlier and set aside for 15-30 mins. Process: Heat ghee in a pan and add the chopped onions. Fry on medium heat for 5-6 mins till translucent. Add the cooked masala paste, add 1/4 tsp salt and fry on medium heat for 5-6 mins. Now lower the heat and continue to fry on low heat for another 8-9 mins till the masala is cooked and ghee separates. Switch of heat and remove pan from the stove. In another pan add 2 tbsp ghee and add the marinated prawns. Fry on medium heat for around 2 on both sides and then add the masala paste to the fried prawns. Mix it well and continue frying on medium heat for 2 mins.
