Welcome to Osama Jalali’s Food World! Today we’re cooking a timeless Old Delhi classic — Purani Dilli Machli ka Salan. Discover the authentic taste of Purani Dilli Machli Ka Salan, a traditional Old Delhi fish curry prepared with mustard oil, Singara fish, and aromatic spices. Inspired by the famous Osama Jalali fish recipe, this Delhi-style fish curry brings together rich flavors of kasuri methi, fried fish, and classic North Indian cooking techniques. Ingredients for Purani Dilli Machli Ka Salan • Oil for frying fish – 200 ml • Singhara fish – 1 kg • Mustard oil – 150 ml • Cloves – 10 • Black pepper – 6 • Black cardamom – 3 • Methi dana (fenugreek seeds) – 6 seeds • Raw onion paste – from 3 onions • Ginger garlic paste – 2 tbsp • Salt – 1 tbsp • Red chili powder – 1 tbsp • Turmeric powder – 1 tsp • Yoghurt – 1 cup (200 ml) • Kasuri methi – 1 tbsp (hand-crushed) Method Wash the Singhara fish thoroughly using vinegar and garlic paste. Heat oil in a pan and fry the fish pieces until evenly golden from both sides. Strain and rest the fried fish in a tray. Heat mustard oil in a lagan until it reaches smoking point. Add cloves, black pepper, black cardamom, methi dana, and onion paste. Sauté well, then add ginger garlic paste and cook until onions release oil. Add red chili powder, turmeric and salt. Sauté nicely and adjust water to cook the masala. When the masala leaves oil, add yoghurt and whisk well. Cook for 5 minutes to develop flavour. Adjust water to reach curry consistency, then gently place the fried fish pieces into the gravy. Cover and cook on medium flame until it comes to a boil. Place on dum for 5–10 minutes. Finish by adding crushed kasuri methi and cook for 5 minutes. Your aromatic Purani Dilli Machli Ka Salan is ready to serve!
