Good thing I was very hungry because this thing was a beast. ;) If you prefer your bannock topped with an egg fried in wrappings of sizzling bacon goodness, look no further than this recipe :) The way this recipe works is awesome: the bacon wraps around the bannock and egg create a kind of grease shield that will prevent the muffin from burning. This is not unlike the 'bacon and egg in a paper bag' trick. You can use whatever bannock mix you want for this recipe, it doesn't really matter. This would also be great with cornbread! You can find both bannock and cornbread recipes in this channel. Enjoy and happy baking!, John
