Production cupping is used as a process of evaluating coffee for sale. It is a very important part of overall quality control and should be undertaken by every coffee roastery small or large. This video describes the processes that we go through within our specialty coffee roastery, Blending Room. I briefly tackle what cupping coffee is and its different forms. I give you an insight in what I feel production cupping is aiming to do; confirm roasted coffee for sale and I highlight some of the metrics that we look for within our roastery based in Hull, East Yorkshire UK. Metrics such as roast colour, solubility, roast time and temperatures notwithstanding their adherence to the flavour notes listed on the coffee packaging. Using four speciality coffees from this week’s roast schedule, I then cup each bowl and analyse the coffee whilst discussing some of the thought processes around whether they would pass or fail our roastery’s production cupping quality controls.
